 Tomatoes (seeded, chopped tomatoes) 1lb

  • Cucumber (peeled) 1lb
  • Red bell peppers (diced) ½ lb
  • Brine-cured black olives (pitted, halved) 2 oz
  • Red onion (diced) 2 oz
  • Fresh Italian parsley 3 tablespoons
  • Baby zucchini (boiled, cut to pieces) 1lb
  • Olive oil 3 tablespoons
  • Red wine vinegar ½ tablespoons
  • Dried oregano ½ tablespoons
  • Feta cheese (crumbled) 2oz


 Combine all salad ingredients, except cheese, in large bowl. Sprinkle cheese over. Season with salt and freshly ground black pepper.
